Chicken Fried Rice

 


Ingredients:

  • 3 cups of cooked Basmati or Samba rice
  • 250g of chicken (cut into small pieces)
  • 1/2 cup of finely chopped mixed vegetables (carrots, beans, leeks, etc.)
  • 2 tablespoons of soy sauce
  • 1 small onion (chopped)
  • 2 cloves of garlic (minced)
  • 1 teaspoon of black pepper powder
  • 1 teaspoon of red chili flakes (optional)
  • 2 eggs
  • Salt to taste
  • Cooking oil

Instructions:

  1. Marinate the Chicken:

    • Mix the chicken pieces with 1 teaspoon of soy sauce, black pepper, and a pinch of salt. Let it marinate for 10 minutes.
  2. Cook the Chicken:

    • Heat oil in a pan and fry the marinated chicken until golden and fully cooked. Remove and set aside.
  3. Prepare the Vegetables:

    • In the same pan, add a little more oil and sauté the onions and garlic until fragrant.
    • Add the mixed vegetables and stir-fry for 2-3 minutes until they soften slightly.
  4. Cook the Eggs:

    • Push the vegetables to one side of the pan and pour in the beaten eggs.
    • Scramble the eggs gently and mix them with the vegetables.
  5. Combine the Rice and Chicken:

    • Add the cooked rice and fried chicken to the pan. Mix everything well.
    • Pour in the remaining soy sauce and adjust the salt and pepper to taste.
  6. Add Final Touches:

    • Stir-fry the rice for 2-3 minutes on high heat to ensure it is evenly mixed and heated through.

Serving Suggestions:

  • Garnish with fresh chopped spring onions or chili flakes for extra flavor.
  • Serve warm with a side of chili paste or lime wedges.
