Sri Lankan Mung Guli Recipe

 

Ingredients:

For the Dough:
  • Mung bean flour - 1 cup
  • All-purpose flour - ½ cup
  • Salt - a pinch
  • Coconut milk - ½ cup (adjust as needed to form the dough)
For the Filling:
  • Grated coconut - 1 cup
  • Jaggery (kithul jaggery) - ½ cup (grated or finely chopped)
  • Cardamom powder - ½ tsp
  • Clove powder - a pinch (optional)
  • Vanilla extract - ½ tsp (optional)
For Frying:
  • Oil - for deep frying

Instructions:

Step 1: Prepare the Filling

  1. Heat a pan over medium heat and add the grated jaggery.
  2. Allow the jaggery to melt gently, stirring occasionally.
  3. Once melted, add the grated coconut and mix well.
  4. Add cardamom powder, clove powder, and vanilla extract (if using). Stir until well combined.
  5. Cook for 2–3 minutes until the mixture thickens slightly. Remove from heat and let it cool.

Step 2: Prepare the Dough

  1. In a mixing bowl, combine mung bean flour, all-purpose flour, and a pinch of salt.
  2. Gradually add coconut milk while mixing, and knead into a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 10–15 minutes.

Step 3: Shape the Mung Guli

  1. Divide the dough into small balls (about the size of a lime).
  2. Flatten each ball into a small circle using your fingers or a rolling pin.
  3. Place a teaspoon of the coconut filling in the center of the circle.
  4. Fold the edges over the filling and shape it into a ball or oval, ensuring the filling is completely sealed.

Step 4: Fry the Mung Guli

  1. Heat oil in a deep frying pan over medium heat.
  2. Once the oil is hot, gently place the prepared mung guli into the oil.
  3. Fry until golden brown on all sides, turning occasionally.
  4. Remove with a slotted spoon and drain on paper towels to remove excess oil.

Serve:

  • Serve mung guli warm or at room temperature with a cup of tea or as a dessert.

Tips:

  • Substitute for Mung Bean Flour: If mung bean flour is unavailable, you can dry roast mung beans and grind them into a fine powder.
  • Storage: Store mung guli in an airtight container for up to 2–3 days.
