Mongolian Fried Rice Recipe


Ingredients:

  • 3 cups of cooked rice (preferably a day old)
  • 150g beef or chicken (thinly sliced)
  • 1/2 cup of mixed vegetables (carrots, bell peppers, green beans, etc.)
  • 2 cloves of garlic (minced)
  • 1 small onion (sliced)
  • 2 eggs (beaten)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sesame oil
  • 1/2 teaspoon of chili flakes (optional)
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of cooking oil
  • Spring onions and sesame seeds for garnish

Instructions:

  1. Prepare the Rice:

    • Use cold, cooked rice for the best texture. Break apart any clumps.
  2. Cook the Protein:

    • Heat 1 tablespoon of oil in a wok or large pan over high heat.
    • Add the beef or chicken slices and stir-fry until cooked through. Remove and set aside.
  3. Sauté Aromatics:

    • In the same pan, add the remaining oil.
    • Sauté the garlic and onion until fragrant and slightly softened.
  4. Cook the Vegetables:

    • Add the mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.
  5. Scramble the Eggs:

    • Push the vegetables to one side of the pan. Pour the beaten eggs into the other side.
    • Scramble the eggs and mix them with the vegetables.
  6. Combine the Rice and Protein:

    • Add the cooked rice to the pan and stir to combine with the eggs and vegetables.
    • Return the cooked beef or chicken to the pan.
  7. Season the Fried Rice:

    • Add soy sauce, hoisin sauce, oyster sauce, sesame oil, black pepper, and chili flakes (if using).
    • Stir-fry on high heat until everything is well mixed and heated through.
  8. Taste and Adjust:

    • Adjust the seasoning with more soy sauce or pepper if needed.

Serving Suggestions:

  • Garnish with chopped spring onions and toasted sesame seeds for extra flavor.
  • Serve hot with a side of pickled vegetables or chili sauce.
