Mongolian Fried Rice Recipe
Ingredients:
- 3 cups of cooked rice (preferably a day old)
- 150g beef or chicken (thinly sliced)
- 1/2 cup of mixed vegetables (carrots, bell peppers, green beans, etc.)
- 2 cloves of garlic (minced)
- 1 small onion (sliced)
- 2 eggs (beaten)
- 2 tablespoons of soy sauce
- 1 tablespoon of hoisin sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of sesame oil
- 1/2 teaspoon of chili flakes (optional)
- 1/2 teaspoon of black pepper
- 2 tablespoons of cooking oil
- Spring onions and sesame seeds for garnish
Instructions:
Prepare the Rice:
- Use cold, cooked rice for the best texture. Break apart any clumps.
Cook the Protein:
- Heat 1 tablespoon of oil in a wok or large pan over high heat.
- Add the beef or chicken slices and stir-fry until cooked through. Remove and set aside.
Sauté Aromatics:
- In the same pan, add the remaining oil.
- Sauté the garlic and onion until fragrant and slightly softened.
Cook the Vegetables:
- Add the mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.
Scramble the Eggs:
- Push the vegetables to one side of the pan. Pour the beaten eggs into the other side.
- Scramble the eggs and mix them with the vegetables.
Combine the Rice and Protein:
- Add the cooked rice to the pan and stir to combine with the eggs and vegetables.
- Return the cooked beef or chicken to the pan.
Season the Fried Rice:
- Add soy sauce, hoisin sauce, oyster sauce, sesame oil, black pepper, and chili flakes (if using).
- Stir-fry on high heat until everything is well mixed and heated through.
Taste and Adjust:
- Adjust the seasoning with more soy sauce or pepper if needed.
Serving Suggestions:
- Garnish with chopped spring onions and toasted sesame seeds for extra flavor.
- Serve hot with a side of pickled vegetables or chili sauce.
