Seafood Rice Recipe


Ingredients:

  • 3 cups of cooked rice (preferably a day old)
  • 200g shrimp (peeled and deveined)
  • 200g squid rings or fish fillet (cut into bite-sized pieces)
  • 1/2 cup of mixed vegetables (carrots, peas, and green beans)
  • 1 small onion (chopped)
  • 2 cloves of garlic (minced)
  • 2 eggs (beaten)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce (optional)
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of black pepper
  • 1/2 teaspoon of chili flakes (optional)
  • 2 tablespoons of cooking oil
  • Lemon wedges and parsley for garnish

Instructions:

  1. Prepare the Rice:

    • Ensure the rice is cold and not sticky. Break apart any clumps.
  2. Cook the Seafood:

    • Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
    • Add the shrimp and squid (or fish) and stir-fry for 2-3 minutes until just cooked. Remove and set aside.
  3. Sauté Aromatics:

    • Add the remaining oil to the pan.
    • Sauté the onion and garlic until fragrant.
  4. Cook the Vegetables:

    • Add the mixed vegetables and stir-fry for 2 minutes until tender-crisp.
  5. Scramble the Eggs:

    • Push the vegetables to one side of the pan. Pour in the beaten eggs and scramble them until cooked. Mix with the vegetables.
  6. Combine the Rice and Seafood:

    • Add the cooked rice to the pan. Stir well to combine with the vegetables and eggs.
    • Return the cooked shrimp and squid (or fish) to the pan.
  7. Season the Rice:

    • Add soy sauce, fish sauce, oyster sauce, black pepper, and chili flakes.
    • Stir-fry on high heat until everything is well combined and heated through.
  8. Taste and Adjust:

    • Adjust the seasoning with more soy sauce or fish sauce if needed.

Serving Suggestions:

  • Garnish with fresh parsley or cilantro.
  • Serve with lemon wedges for a zesty kick and enjoy your delicious Seafood Rice! 🦐🐟🍚
