Nasi Goreng Recipe (Indonesian Fried Rice)

Ingredients:

  • 3 cups of cooked rice (preferably a day old)
  • 2 eggs
  • 200g chicken or shrimp (optional)
  • 1 small onion (chopped)
  • 2 cloves of garlic (minced)
  • 2 tablespoons of sweet soy sauce (Kecap Manis)
  • 1 tablespoon of regular soy sauce
  • 1 teaspoon of sambal oelek (Indonesian chili paste)
  • 1/2 cup of mixed vegetables (carrots, peas, etc.)
  • 2 tablespoons of cooking oil
  • Salt and pepper to taste
  • Fried shallots and sliced cucumber (for garnish)

Instructions:

  1. Prepare the Rice:

    • Use cold, cooked rice for the best texture. Break up any clumps with a fork.
  2. Cook the Protein (if using):

    • Heat 1 tablespoon of oil in a wok or large pan.
    • Cook chicken or shrimp until fully done and set aside.
  3. Sauté the Aromatics:

    • Add the remaining oil to the pan.
    • Sauté the onion and garlic until fragrant.
  4. Cook the Vegetables:

    • Add the mixed vegetables and stir-fry for 2 minutes.
  5. Scramble the Eggs:

    • Push the vegetables to one side of the pan and crack in the eggs.
    • Scramble the eggs until cooked, then mix them with the vegetables.
  6. Stir-Fry the Rice:

    • Add the cooked rice to the pan. Mix thoroughly with the vegetables and eggs.
    • Add sweet soy sauce, regular soy sauce, and sambal oelek. Stir-fry until the rice is evenly coated and heated through.
  7. Combine and Serve:

    • Add the cooked chicken or shrimp to the pan and mix well.
    • Adjust the seasoning with salt and pepper as needed.

Serving Suggestions:

  • Garnish with fried shallots, sliced cucumber, and tomato.
  • Serve with prawn crackers and a fried egg on top for a traditional touch.
