Nasi Goreng Recipe (Indonesian Fried Rice)
Ingredients:
- 3 cups of cooked rice (preferably a day old)
- 2 eggs
- 200g chicken or shrimp (optional)
- 1 small onion (chopped)
- 2 cloves of garlic (minced)
- 2 tablespoons of sweet soy sauce (Kecap Manis)
- 1 tablespoon of regular soy sauce
- 1 teaspoon of sambal oelek (Indonesian chili paste)
- 1/2 cup of mixed vegetables (carrots, peas, etc.)
- 2 tablespoons of cooking oil
- Salt and pepper to taste
- Fried shallots and sliced cucumber (for garnish)
Instructions:
Prepare the Rice:
- Use cold, cooked rice for the best texture. Break up any clumps with a fork.
Cook the Protein (if using):
- Heat 1 tablespoon of oil in a wok or large pan.
- Cook chicken or shrimp until fully done and set aside.
Sauté the Aromatics:
- Add the remaining oil to the pan.
- Sauté the onion and garlic until fragrant.
Cook the Vegetables:
- Add the mixed vegetables and stir-fry for 2 minutes.
Scramble the Eggs:
- Push the vegetables to one side of the pan and crack in the eggs.
- Scramble the eggs until cooked, then mix them with the vegetables.
Stir-Fry the Rice:
- Add the cooked rice to the pan. Mix thoroughly with the vegetables and eggs.
- Add sweet soy sauce, regular soy sauce, and sambal oelek. Stir-fry until the rice is evenly coated and heated through.
Combine and Serve:
- Add the cooked chicken or shrimp to the pan and mix well.
- Adjust the seasoning with salt and pepper as needed.
Serving Suggestions:
- Garnish with fried shallots, sliced cucumber, and tomato.
- Serve with prawn crackers and a fried egg on top for a traditional touch.
