Sri Lankan Sweet Potato Curry Recipe

 


Ingredients:

  • Sweet potatoes - 4 medium-sized, peeled and cubed
  • Onion - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Green chilies - 2, sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1-inch piece, minced
  • Curry leaves - 1 sprig
  • Cinnamon stick - 1 small piece
  • Mustard seeds - ½ tsp
  • Cumin seeds - ½ tsp
  • Coriander powder - 1 tsp
  • Turmeric powder - ½ tsp
  • Chili powder - 1 tsp (adjust to taste)
  • Curry powder - 1 tsp
  • Coconut milk - 1 cup (thick)
  • Coconut oil - 2 tbsp (or vegetable oil)
  • Salt - to taste
  • Water - ½ cup (if needed to adjust consistency)

Instructions:

Step 1: Prepare the Sweet Potatoes

  1. Peel and cube the sweet potatoes into bite-sized pieces. Set aside.

Step 2: Sauté the Aromatics

  1. Heat coconut oil in a large pan over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds, cinnamon stick, and curry leaves, and sauté for 1 minute.
  4. Add the sliced onions, garlic, ginger, and green chilies. Cook until the onions become soft and golden brown.

Step 3: Add the Spices

  1. Add coriander powder, turmeric powder, chili powder, and curry powder to the pan. Stir well for 1 minute to release the aromas of the spices.

Step 4: Cook the Sweet Potatoes

  1. Add the cubed sweet potatoes and mix well with the spices.
  2. Add the diced tomato and cook for 2–3 minutes until the tomato softens.

Step 5: Add Coconut Milk

  1. Pour in the coconut milk and stir to combine.
  2. Add salt to taste and a little water if needed for the desired consistency.
  3. Bring the curry to a gentle simmer, cover the pan, and cook for 15–20 minutes, or until the sweet potatoes are tender and cooked through.

Step 6: Serve

  • Once the sweet potatoes are cooked, taste the curry and adjust the seasoning if necessary.
  • Garnish with fresh curry leaves if desired.
  • Serve the curry hot with steamed rice, roti, or string hoppers.

Tips:

  • Consistency: If the curry is too thick, add a little more water or coconut milk.
  • Additional Veggies: You can add carrots, peas, or other vegetables for variety.
  • Adjusting Spice Level: Add or reduce the amount of chili powder and green chilies to adjust the spice level to your taste.
