Ingredients:
- Sweet potatoes - 4 medium-sized, peeled and cubed
- Onion - 1 medium, sliced
- Tomato - 1 medium, diced
- Green chilies - 2, sliced
- Garlic - 4 cloves, minced
- Ginger - 1-inch piece, minced
- Curry leaves - 1 sprig
- Cinnamon stick - 1 small piece
- Mustard seeds - ½ tsp
- Cumin seeds - ½ tsp
- Coriander powder - 1 tsp
- Turmeric powder - ½ tsp
- Chili powder - 1 tsp (adjust to taste)
- Curry powder - 1 tsp
- Coconut milk - 1 cup (thick)
- Coconut oil - 2 tbsp (or vegetable oil)
- Salt - to taste
- Water - ½ cup (if needed to adjust consistency)
Instructions:
Step 1: Prepare the Sweet Potatoes
- Peel and cube the sweet potatoes into bite-sized pieces. Set aside.
Step 2: Sauté the Aromatics
- Heat coconut oil in a large pan over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, cinnamon stick, and curry leaves, and sauté for 1 minute.
- Add the sliced onions, garlic, ginger, and green chilies. Cook until the onions become soft and golden brown.
Step 3: Add the Spices
- Add coriander powder, turmeric powder, chili powder, and curry powder to the pan. Stir well for 1 minute to release the aromas of the spices.
Step 4: Cook the Sweet Potatoes
- Add the cubed sweet potatoes and mix well with the spices.
- Add the diced tomato and cook for 2–3 minutes until the tomato softens.
Step 5: Add Coconut Milk
- Pour in the coconut milk and stir to combine.
- Add salt to taste and a little water if needed for the desired consistency.
- Bring the curry to a gentle simmer, cover the pan, and cook for 15–20 minutes, or until the sweet potatoes are tender and cooked through.
Step 6: Serve
- Once the sweet potatoes are cooked, taste the curry and adjust the seasoning if necessary.
- Garnish with fresh curry leaves if desired.
- Serve the curry hot with steamed rice, roti, or string hoppers.

- Consistency: If the curry is too thick, add a little more water or coconut milk.
