Sri Lankan Coconut Roti Recipe

 




Ingredients for Coconut Roti:

  • All-purpose flour - 2 cups
  • Grated coconut - 1 cup (fresh or frozen, thawed)
  • Salt - 1 tsp
  • Green chilies - 1-2, finely chopped (optional)
  • Onion - 1 small, finely chopped (optional)
  • Water - as needed

Instructions:

  1. Prepare the dough:

    • In a large mixing bowl, combine flour, grated coconut, and salt.
    • If using, add chopped green chilies and onion for extra flavor.
    • Gradually add water, a little at a time, and knead into a soft, non-sticky dough.
  2. Divide the dough:

    • Divide the dough into equal-sized balls (about the size of a lime).
  3. Flatten the roti:

    • Lightly flour a flat surface and flatten each ball into a round disc, about ¼ inch thick.
  4. Cook the roti:

    • Heat a skillet or griddle over medium heat.
    • Place the roti on the skillet and cook for 2–3 minutes on each side, or until golden brown spots appear.
    • Press lightly with a spatula to ensure even cooking.
  5. Serve:

    • Serve hot with lunu sambol or curry.

Sri Lankan Lunu Sambol Recipe

Ingredients for Lunu Sambol:

  • Red onions - 1 large or 5-6 small, finely chopped
  • Dried red chilies - 2-3 (adjust to taste)
  • Maldives fish flakes - 1-2 tbsp (optional, for added flavor)
  • Salt - to taste
  • Lime juice - 1-2 tbsp
  • Tomato - 1 small, finely chopped (optional, for variation)

Instructions:

  1. Prepare the chili paste:

    • Using a mortar and pestle (or blender), grind the dried red chilies and salt into a fine paste.
    • If using Maldives fish, add it to the mixture and grind well.
  2. Mix with onions:

    • In a bowl, mix the chopped onions with the chili paste.
    • Add lime juice and mix thoroughly. Adjust salt if needed.
  3. Optional step (with tomato):

    • For a milder sambol, you can add finely chopped tomato and mix well.
  4. Serve:

    • Serve alongside hot coconut roti or rice for an authentic Sri Lankan experience.
