Sri Lankan Potato Curry Recipe

 

Ingredients:

  • Potatoes - 4–5 medium-sized, peeled and cubed
  • Onion - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Green chilies - 2, sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1-inch piece, minced
  • Curry leaves - 1 sprig
  • Cinnamon stick - 1 small piece
  • Mustard seeds - ½ tsp
  • Cumin seeds - ½ tsp
  • Coriander powder - 1 tsp
  • Turmeric powder - ½ tsp
  • Chili powder - 1 tsp (adjust to taste)
  • Curry powder - 1½ tsp
  • Coconut milk - 1 cup (thick)
  • Coconut oil - 2 tbsp (or vegetable oil)
  • Salt - to taste
  • Water - ½ cup (if needed to adjust consistency)

Instructions:

Step 1: Prepare the Potatoes

  1. Peel and cube the potatoes. Set them aside.

Step 2: Sauté the Aromatics

  1. Heat coconut oil in a large pan over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds, cinnamon stick, and curry leaves. Sauté for 1 minute until fragrant.
  4. Add the sliced onions, garlic, ginger, and green chilies. Cook until the onions are soft and golden brown.

Step 3: Add Spices

  1. Add coriander powder, turmeric powder, chili powder, and curry powder to the pan. Stir for 1 minute, allowing the spices to release their aroma.

Step 4: Add the Potatoes

  1. Add the cubed potatoes to the pan and mix well with the spices.
  2. Add the diced tomato and cook for 2–3 minutes until it softens.

Step 5: Add Coconut Milk

  1. Pour in the coconut milk and stir to combine.
  2. Add salt to taste and a little water if you prefer a thinner consistency.
  3. Bring the curry to a gentle simmer, cover the pan, and cook for 15–20 minutes, or until the potatoes are tender and the curry thickens.

Step 6: Final Touch

  • Taste and adjust salt if needed.
  • Garnish with extra curry leaves if desired.

Serve:

  • Serve the Sri Lankan potato curry hot with steamed rice, roti, or string hoppers.

Tips:

  • Spice Levels: Adjust the amount of chili powder and green chilies to suit your preferred spice level.
  • Additional Veggies: You can add carrots, peas, or other vegetables to the curry for variety.
  • Consistency: If the curry is too thick, add a little more water or coconut milk to adjust.
