- Cinnamon stick - 1 small piece
- Mustard seeds - ½ tsp
- Cumin seeds - ½ tsp
- Coriander powder - 1 tsp
- Turmeric powder - ½ tsp
- Chili powder - 1 tsp (adjust to taste)
- Curry powder - 1½ tsp
- Coconut milk - 1 cup (thick)
- Coconut oil - 2 tbsp (or vegetable oil)
- Salt - to taste
- Water - ½ cup (if needed to adjust consistency)
Instructions:
Step 1: Prepare the Potatoes
- Peel and cube the potatoes. Set them aside.
Step 2: Sauté the Aromatics
- Heat coconut oil in a large pan over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, cinnamon stick, and curry leaves. Sauté for 1 minute until fragrant.
- Add the sliced onions, garlic, ginger, and green chilies. Cook until the onions are soft and golden brown.
Step 3: Add Spices
- Add coriander powder, turmeric powder, chili powder, and curry powder to the pan. Stir for 1 minute, allowing the spices to release their aroma.
Step 4: Add the Potatoes
- Add the cubed potatoes to the pan and mix well with the spices.
- Add the diced tomato and cook for 2–3 minutes until it softens.
Step 5: Add Coconut Milk
- Pour in the coconut milk and stir to combine.
- Add salt to taste and a little water if you prefer a thinner consistency.
- Bring the curry to a gentle simmer, cover the pan, and cook for 15–20 minutes, or until the potatoes are tender and the curry thickens.
Step 6: Final Touch
- Taste and adjust salt if needed.
- Garnish with extra curry leaves if desired.
