Mixed Fried Rice Recipe
Ingredients:
- 3 cups of cooked rice (preferably a day old)
- 100g chicken (cut into small pieces)
- 100g shrimp or prawns (peeled and deveined)
- 2 eggs (beaten)
- 1/2 cup of mixed vegetables (carrots, beans, peas, etc.)
- 1 small onion (chopped)
- 2 cloves of garlic (minced)
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of black pepper powder
- 1/2 teaspoon of chili flakes (optional)
- Salt to taste
- 2 tablespoons of cooking oil
- Spring onions and fried shallots for garnish
Instructions:
Prepare the Rice:
- Ensure the rice is cold and fluffy. Break up any clumps before cooking.
Cook the Chicken and Shrimp:
- Heat 1 tablespoon of oil in a wok or large pan.
- Add the chicken and shrimp. Stir-fry until fully cooked and set aside.
Sauté Aromatics:
- Add the remaining oil to the pan.
- Sauté the onion and garlic until fragrant.
Cook the Vegetables:
- Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are slightly softened.
Scramble the Eggs:
- Push the vegetables to one side of the pan and pour the beaten eggs into the empty space.
- Scramble the eggs until cooked, then mix them with the vegetables.
Combine the Rice:
- Add the cooked rice to the pan. Stir to mix it with the vegetables and eggs.
- Add the cooked chicken and shrimp to the pan.
Season the Fried Rice:
- Add soy sauce, oyster sauce, black pepper, and chili flakes.
- Stir-fry on high heat until everything is well combined and the rice is heated through.
Taste and Adjust:
- Adjust the salt and pepper as needed.
Serving Suggestions:
- Garnish with chopped spring onions, fried shallots, or slices of fresh cucumber.
- Serve hot with chili paste or lime wedges for extra flavor.
