Mixed Fried Rice Recipe


Ingredients:

  • 3 cups of cooked rice (preferably a day old)
  • 100g chicken (cut into small pieces)
  • 100g shrimp or prawns (peeled and deveined)
  • 2 eggs (beaten)
  • 1/2 cup of mixed vegetables (carrots, beans, peas, etc.)
  • 1 small onion (chopped)
  • 2 cloves of garlic (minced)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of black pepper powder
  • 1/2 teaspoon of chili flakes (optional)
  • Salt to taste
  • 2 tablespoons of cooking oil
  • Spring onions and fried shallots for garnish

Instructions:

  1. Prepare the Rice:

    • Ensure the rice is cold and fluffy. Break up any clumps before cooking.
  2. Cook the Chicken and Shrimp:

    • Heat 1 tablespoon of oil in a wok or large pan.
    • Add the chicken and shrimp. Stir-fry until fully cooked and set aside.
  3. Sauté Aromatics:

    • Add the remaining oil to the pan.
    • Sauté the onion and garlic until fragrant.
  4. Cook the Vegetables:

    • Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are slightly softened.
  5. Scramble the Eggs:

    • Push the vegetables to one side of the pan and pour the beaten eggs into the empty space.
    • Scramble the eggs until cooked, then mix them with the vegetables.
  6. Combine the Rice:

    • Add the cooked rice to the pan. Stir to mix it with the vegetables and eggs.
    • Add the cooked chicken and shrimp to the pan.
  7. Season the Fried Rice:

    • Add soy sauce, oyster sauce, black pepper, and chili flakes.
    • Stir-fry on high heat until everything is well combined and the rice is heated through.
  8. Taste and Adjust:

    • Adjust the salt and pepper as needed.

Serving Suggestions:

  • Garnish with chopped spring onions, fried shallots, or slices of fresh cucumber.
  • Serve hot with chili paste or lime wedges for extra flavor.
